View: Pale pink, clean and bright.

Nose: High aromatic intensity with a very elegant blend of flower and fruit. We note records of honey, white flowers, rose petal, grapefruit skin, and peach pit.

Mouth: Good attack with a lot of volume and freshness. Perfectly balanced and very long. Fruity aftertaste with citrus and floral notes.

Name: Montebuena, Salvide, Vircio and La Encina.

Description: Small plots located on the slopes of the Sierra de Cantabria of old Viura vines and young Tempranillo vines, specifically in San Vicente de la Sonsierra, Labastida and Briñas, at an altitude between 450 and 550 meters above sea level.

Age: Viura vines have an average between 80 and 82 years, while those of Tempranillo 14.

Soil: Clay-calcareous.

Climate: Continental with Atlantic influence. The 2020 harvest was marked by the abundant rains of winter and spring. In addition, the high temperatures in May and the humidity caused a mildew risk alert. In short, it was a year of abundant harvest in which production had to be regulated through green operations and cluster thinning.

Harvest: Manual in boxes, carried out on September 22, 2020.

Vinification: Viura and Tempranillo were chilled for 24 hours in the cold room, in their respective boxes. In total 8,000 kilos of grapes were selected before being put to the press. Once in it, only 50% of the yield was extracted, that is to say: the purest must. This rosé must fermented for a long time in stainless steel tanks of 1,000 liters at a very low temperature.

Aging: After the wine was unified, it remained in a stainless steel tank with a proportion of white grape lees, which were suspended with nitrogen for 2 months.
