This white wine is made with a Chardonnay from the plot La Vieja de Pago Finca Élez. It is a wine with very typical aromas of the variety, such as citrus and tropical fruit. In addition, having been aged briefly on its own lees, it is very complex, achieving great elegance, minerality and balance.
Nose:
Fragrant, with aromas of white and tropical fruits.
Palate:
Elegant, with a well-balanced acidity. It presents good structure, fruity and mineral notes. The finish is long, leaving the memory of the unique features provided by the terroir.

Description:
Vineyards in several plots of Pago Finca Élez, in the municipality of El Bonillo, Albacete, at an altitude of 1,080 metres above sea level.
Soil:
Sandy clay loam on a limestone base. They come from the Mesozoic with more than 66 million years old.
Climate:
Continental. It alternates very cold winters with hot summers. There is also a wide temperature range between day and night temperatures.
Yield:
Controlled, less than 7,000 kilograms per hectare.
Vinification:
Destemming and maceration for 8-9 hours at a temperature of 15 ºC. Controlled fermentation below 17º C in French oak vats and stainless steel tanks.
Ageing:
Aging on lees for 6-7 months.
