The climate of the area is continental Mediterranean. It is therefore a temperate climate with dry summers and cold winters in which snowfall may appear. Castaño Cepas Viejas Collection is born from grapes that grow at an altitude of 750 meters: the Monastrell is cared for by short pruning, while the Cabernet Sauvignon grows on a trellis. Both varieties are old, as the first is almost 50 years old and the second is more than 30.
After the corresponding harvesting process, the Castaño Colección Cepas Viejas grape is allowed to ferment alcoholicly at a controlled temperature of between 26º and 28º. . Subsequently, malolactic fermentation takes place. Castaño Cepas Viejas Collection, ultimately rests for ten months in oak barrels. The bottling is carried out without a previous stabilization process. Castaño has more than 500 hectares of vineyards spread over four plots: Las Gruesas, Pozuelo, Arabi and El Espinal. The winery, which was born thanks to the efforts of Ramón Castaño Santa, is currently led by his three sons, who began to join the project in the 1980s.
