The Rubicón Winery was born in 1979, and is located in the La Geria Park, very close to the Timanfaya National Park.
Its reference is to create a unique winery that preserves the tradition of Lanzarote and is currently part of the Regulatory Council of the Designation of Origin Wines of Lanzarote.
Its vineyards are in holes dug in the ashes of a volcano, giving rise to a unique cultivation system in the world. The system of planting in conical holes allows the plant to grab the fertile soil buried under the layer of ashes.
The depth and diameter of the excavated holes vary according to the thickness of the ashes, and can reach depths of up to three meters. Due to the orography of the land, all the work of the vineyard is manual and without mechanization.
Its vineyards on volcanic ash give rise to a unique variety, the Malvasía Volcánica. This exceptional variety is one of the oldest white grape varieties, standing out for its balance, intense flavor and aroma.
