Elaboration
The harvest is collected in 250 Kg racks and once in the winery, the grapes go through grain-by-grain optical selection. For three days a pre-fermentative maceration takes place. Slowly the fermentation by yeast from the vineyard begins. On what day selected autochthonous yeast is inoculated. The process is carried out in concrete tanks designed and built exclusively for Lalomba. The maceration and extraction combine delestages and pumping over at certain times. After the 12-day post-fermentation maceration, we gently press and transfer the wine to 500-litre French oak barrels, where it undergoes malolactic fermentation. The wine is aged for 14 months in the same barrels, without any racking. After that, it goes back to the concrete, for its final refinement. He stays there for eight months.
