Specifically, for the production of Pascal Jolivet Pouilly-Fumé, Sauvignon blanc grapes grown on different soils were selected, namely, 50% on limestone, 30% on flint and the remaining 20% on clay-calcareous soil. Each plot was vinified separately in thermoregulated stainless steel tanks to preserve the minerality, fineness, fruity presence, richness and structure provided by each of these soils. After the final blend, a complex, expressive, elegant and timeless wine was obtained, especially recommended to accompany all kinds of fish, seafood and goat cheese.
