On the nose it is fragrant, dominated by very fine floral notes (acacia) and fruit notes (lemon jam), on a vegetable background (fennel).
Intense and fresh mouthfeel. Delicate fruity acidity.
The grapes with which Pazo das Bruxas Albariño 2021 was made come from O Rosal and Val do Salnés, two of the best sub-areas of Rías Baixas, characterized by a climate with a marked Atlantic influence and its structure of sandy soils with granite stone.
After the selection of the best clusters, the elaboration in the winery contemplated the fermentation of the must, under temperature control, in stainless steel tanks for 16 days. The result is a fragrant and lively Albariño, which you can enjoy as an aperitif and as an accompaniment to cooked and grilled shellfish, mild white fish and uncured goat cheese.
