Paco & Lola is a young and modern winery founded in 2005 at the initiative of a group of viticulturists and wine producers from the O Salnés region, who joined together as a cooperative under the name Sociedad Cooperativa Vitivinícola Arousana. It currently has more than 400 members, making it the cooperative with the most members in the Rías Baixas.
Paco & Lola has more than 200 hectares of its own vineyards in more than 1,800 plots, all located in the Valle do Salnés. Paco & Lola has been part of the Life Viñas Atlánticas Project since 2010, a project that involves all partners in minimizing the use of chemical products.
Paco & Lola is a white wine made with Albariño from vineyards located in the Salnés Valley sub-area, planted on sandy loam, granite and slightly acidic soils. The harvest is manual in 20kg boxes. Once in the winery, the grapes are destemmed and pressed, fermented in stainless steel tanks at a controlled temperature, 16°C, for 21 days, remaining on their fine lees until stabilized and bottled.
