To the eye: The white wine Davide Observador has a bright golden yellow colour with steely reflections. This white wine aged on lees forms a fine tear in the glass, somewhat glyceric. On the nose : Aromatic elegant, delicate and good intensity. This blend of Albariño and Godello offers fruity and floral aromas intermingled with fresh citrus and soft spicy notes. An intense mineral background is perceived, very pleasant. In the mouth: Fresh and tasty. This white wine from the Davide winery has a passage marked by its texture and with a certain volume. The fruit appears greedy, highlighting some juicy stone fruits. Very good acidity. Good finish, pleasant, with a slight bitterness and fruity sensations in its aftertaste.
Davide Observador made by the famous winemaker Pablo Estévez, elected the Best Winemaker of Young Wines of Spain 2019, from a blend of Albariño and Godello, in equal parts. Both varieties come from a micro-plot with an optimal orientation, vines planted on granitic and poor soils, located in the Salnés Valley, within the Rías Baixas DO. The Davide winery carries out an artisanal and natural vinification process without the addition of additives. Once in the winery, the bunches are processed whole grapes without destemming, each variety separately. After racking, spontaneous fermentation begins with the grape's own yeasts, a process that lasts for about 20 days. At the end, the final blend is made before being left to rest with its lees for 9 months in these tanks with periodic bâttonnages. Finally, this white wine Davide Observador 2021 was cold-stabilized before its bottling. Finally, this white wine from Rías Baixas was aged for two months in the cellar prior to its release.
