We are facing a special and different sparkling wine as it is made with the Albariño variety. These grapes were harvested 10 days before those used in the rest of the winery's wines in order to guarantee a fresh Brut Nature where the variety was the protagonist. On the nose it is fine, complex and expressive. On the palate it is broad, tasty, creamy and fresh.
Nose: The nose is fine, complex and expressive. First, it shows features of bottle aging and a background of seawater, eucalyptus and white fruits with a deep reminiscence of Albariño. Background of toasted bread and almond shell.
Mouth: The palate is broad, tasty, creamy and fresh. Again the notes of the variety appear with a pleasant and fresh finish in the mouth.
Climate: The autumn months were presented with high temperatures and very little rain, unusual conditions on the Atlantic coast. The cold ones arrived in January and with a single night of frost. Spring began with days and days of rain: strong and weak, constant or at times, which marked an atypical fruit set. Summer surprised us with continuous sunny days and a lot of heat. After the water stress suffered by the vines, the good weather led to the maturation of their clusters so that the harvest could begin.
Harvest: Approximately 10 days before the general harvest, the clusters are cut from those plots that show the best indexes for the production of a sparkling wine. The grapes were harvested by hand and transported to the winery in small boxes where the clusters are selected by hand.
Vinification: Very intense work at the selection tables and transfer of the grapes to the press, where a bleeding of 40% of the must is obtained. This is followed by controlled fermentation at 15ºC. The utmost care is taken in the rest of the process: racking, bottling, etc., maintaining its aromatic richness and the intensity of its nuances to the maximum.
