Listán Negro (30%), Baboso (30%), Castellana (25%) y Tintilla (15%)
The Red Wine 'Tinto Varietal', is a wine that belongs to the El Lomo wineries and has a protected designation of origin wine from the Canary Islands.
It is made from a manual harvest with double selection of the clusters at the optimum point of maturity. The Listán Negro variety enters the tank without being crushed and goes on to macerate-ferment for 5 days at 23-27⁰C. The other varieties undergo a longer maceration-fermentation, and some of them undergo fermentation in French oak barrels. The must is then extracted and the skins of the different varieties are pressed separately. After several rackings we make the coupage and bottle the wine.
Cherry red color with a medium-high layer. Clean, bright and with abundant tears.
NOSE
On the nose, red fruit and berries, balsamic and spices stand out. Notes of coffee, chocolate and liquorice.
MOUTH
The palate is structured with great balance, powerful but pleasant tannins, with great personality, but without losing the characteristics of the Castilian and Baboso Negro grapes.
