Red wine produced using the 'carbonic maceration' method basically consists of placing the whole bunches of grapes in a tank and closing it hermetically, creating an atmosphere rich in carbon dioxide (CO2) inside. For this type of elaboration, whole grapes are needed, healthy and without crushed or broken grains. Something that in our wine 'Disparate' is achieved with the careful manual harvest of each cluster and above all with the entrance of the grape to the tanks by gravity so as not to damage the grape grains.

Nose: intense, with a perfume of ripe red fruits, blackberries, strawberries camouflaged in dairy aromas of banana yogurt.

Mouth: silky, round, it is an easy sip, fun and full of sensations.

For this type of elaboration, whole grapes are needed, healthy and without crushed or broken grains. Something that in our wine 'Disparate' is achieved with the careful manual harvest of each cluster and above all with the entrance of the grape to the tanks by gravity so as not to damage the grape grains. Once the tank is full, it is hermetically sealed and fermentation begins. This has the difference with respect to the traditional method, that it is produced inside each grape grain, which is why this wine has so many aromatic registers. The duration of this process can take from 6 to 8 days.

Once the fermentation is complete, we proceed to devatting. We proceed to the destemming of the whole clusters that we take out of the deposit and from there they go directly to the press. The wine that we extract is separated into 2 types: flower wine and press wine, from which we select the second, the press wine, for the elaboration of 'Disparate' that will be the one with the highest aromatic and taste concentration. After several rackings sheltered from the air, so as not to lose that aromatic intensity typical of this production, it is bottled and marketed.
