The whole clusters are refrigerated until they reach a temperature of less than 4ºC before being pressed and thus obtaining the cleanest must possible, avoiding any transfer of color from the skins and seeds.
Once we have that clean must, fermentation begins in stainless steel tanks at a controlled temperature for about 6 to 8 days and then, when it reaches the desired density, we proceed to interrupt the fermentation by cold, drastically lowering the temperature of the must to 0º centigrade. with the aim of inactivating the complete fermentation cycle and obtaining a delicate semi-sweet wine.
