The Brunello di Montalcino from Col d'Orcia enters the glass with a radiant ruby red color and violet reflections. The intense and charismatic bouquet of this Sangiovese monovarietal exudes the typical Brunello notes of ripe red berries, juicy cherries and fully ripe plums. The grapes for this Brunello come from special clones of Sangiovese and undergo another rigorous selection after the manual harvest. The yield of this Col d'Orcia wine is almost half (45 hl/ha) of the maximum permitted yield of 80 hl/ha for Brunello di Montalcino.
Fermentation takes place with the skins for about 18-20 days at a controlled temperature below 28°C in 150 hl stainless steel tanks. The goal is to extract as much color and tannin as possible. Brunello di Montalcino from Col d'Orcia is aged for 3 years in 25-50 and 75 hl Slavonian and Allier oak barrels, followed by at least 12 months of refining in the bottle.
