Domaine Nathalie et Gilles Fevre is the project of a young couple of winemakers whose goal is to improve and enrich the heritage of their ancestors. An entire legacy that has its origins in 1745 and that over the years has been expanding in the heart of the Chablis vineyard to enhance the development and reputation of the region.
Domaine Nathalie et Gilles Fevre Chablis comes from vineyards located in the town of Fontanay-Près-Chabli. It is an area of 35 hectares with vines between 15 and 60 years old that are planted on steep slopes with stony soils. Traditional agriculture is practiced and the harvest is manual at the optimum moment of maturation. In the winery, the Domaine Nathalie et Gilles Fevre Chablis grapes are gently pressed and the must obtained ferments in stainless steel tanks at a controlled temperature. The wine then rests on its fine lees for 10 months in these same tanks. Finally, it is bottled with very light filtering.
